Learning Real Vietnamese Spring Rolls, Not the Tourist Version

Some of the best food lessons don't come from a restaurant menu — they come from someone showing you how the dish actually gets made. On this trip, that lesson came from a Vietnamese woman who walked me through real spring rolls: the rolling technique, and a dipping sauce she treated like a small secret rather than something you'd find written down anywhere.
Fresh and hands-on, it turned out better than anything I've ordered off a restaurant menu. What made it stick wasn't just the taste, it was the framing: this was real Vietnamese street food culture, not the version made for tourists. Getting shown the technique firsthand, sauce included, is a different experience than just eating the finished product.
It's the kind of moment worth asking about: would you sit down and learn to roll your own, secret sauce and all, or would you rather just show up and eat? Either way, it's one of those simple, hands-on food moments that ends up being more memorable than the meal itself.
